Easy Kaju Katli
Yield: 20-25 pieces
Ingredients:
500g cashew nuts
1/2 cup water
1 cup sugar
1/2 teaspoon cardamom powder
1 teaspoon ghee
Silver leaf (optional)
Method:
Grind the cashews in a blender to a fine powder. Be careful not to over-blend as cashews can release oil and turn into a paste.
In a non-stick pan, combine sugar and water.
Dissolve and boil the sugar for 1 minute over medium heat.
Lower the heat, add the cashew powder to the sugar syrup, and mix thoroughly.
Stir continuously to avoid lumps.
Add cardamom powder and keep stirring until the mixture thickens and starts leaving the sides of the pan.
Add 1 teaspoon of ghee to the mixture.
Continue stirring until the mixture forms a smooth dough.
Transfer the dough to a greased surface or parchment paper.
When slightly cool, knead the dough until smooth.
Roll it out evenly to about 1/4 inch thickness.
If desired, gently place the silver leaf on top of the rolled-out mixture.
Cut the rolled dough into diamond shapes.
Let them set for a few minutes, then enjoy!
Tip: Store Kaju Katli in an airtight container at room temperature for up to a week.
