Carrot Laddu | Gajar ka Laddu
Ingredients:
2 cups carrot, tightly packed
2 tbsp ghee
1 tbsp cashews, chopped
1 tbsp raisins
1/2 cup sugar
4 tbsp dry coconut powder
4 tbsp milk powder
1/4 tsp cardamom powder
Small cupcake liners
Method:
Wash the carrots thoroughly, peel and grate them.
Heat 1 tbsp ghee in a non-stick pan. (Don't overheat the ghee).
Add in the cashews, fry for 30 seconds, add raisins fry for 30 seconds.
Remove the cashews and raisins and keep that aside.
Add 1 tbsp ghee to the same pan and then add grated carrot and sauté on low heat for 10 minutes or until the raw smell leaves.
Now add sugar, cook on medium heat, stirring frequently, until the carrot mixture dries up.
Add in the dry coconut powder, milk powder, cardamom powder, fried cashews and raisins.
Mix well, cook until the mixture is thick and dry.
Switch off the stove and let the mixture cool down completely.
Carrot Laddu is now ready to be served.
Now take some carrot mixture and shape that into a small lemon sized ball.
You can also dip the laddus into the dry coconut.
Arrange each laddu in a small cupcake liner and serve.
