Bakery Style Egg Puffs

Servings - 6



Ingredients:   



  • 3 eggs (hard-boiled and sliced into halves) 

  • 1 puff pastry sheet  

  • 2 tablespoons oil 

  • 1 green chilli (finely chopped) 

  • 5 curry leaves (finely chopped) 

  • 2 onions 

  • 3 tomatoes 

  • 1/2 teaspoon chilli powder 

  • 1/2 teaspoon garam masala 

  • 1 teaspoon coriander powder 

  • Salt to taste 

  • 1/2 teaspoon turmeric 

  • 1/2 teaspoon cumin powder 

  • 1/4 teaspoon pepper powder 

  • 2 tablespoons coriander leaves 

  • 1 beaten egg (for egg wash)  


Method:  



  1. Begin by hard-boiling the eggs, then peel and slice them into halves. 

  2. Heat oil in a pan, and add chopped green chilli, curry leaves, and onions. 

  3. Sauté until the onions are slightly softened. 

  4. Once the onions are soft, add chopped tomatoes and all the spices: chilli powder, garam masala, coriander powder, turmeric, cumin powder, pepper powder, and salt to taste. 

  5. Cook until the tomatoes are softened and the spices are well incorporated. 

  6. Add chopped coriander leaves and mix thoroughly. 

  7. Preheat your oven to 200°C (392°F). 

  8. Now, take the puff pastry sheet and cut it into 6 equal parts. 

  9. Place a portion of the prepared masala in the centre of each rectangular pastry sheet. 

  10. Brush some water along the pastry sheet's edges to help seal. 

  11. Fold each corner of the pastry sheet towards the centre, overlapping them to form a seal. 

  12. Place the prepared pastries on a baking tray lined with parchment paper. 

  13. Gently brush the beaten egg over the sealed puff pastries. 

  14. Bake them in the preheated oven for 12-15 minutes or until the top layer turns golden brown. 

  15. Once baked, remove from the oven and let them cool slightly before serving.

  16. Enjoy your delicious egg puff pastries with a hot cup of tea or your favourite dip!
