Chicken Taco with Sour Cream
Ingredients:
500 g chicken breasts
35 g taco seasoning mix
2 + 1 tbsp olive oil
1 large onion
1/4 cup tomato sauce
Salt to taste
1 cup red kidney beans, cooked
Taco shells
Red onion
Bell pepper - red, green & yellow
Sour cream
Fresh coriander, optional
Method:
Add chicken to a large bowl, add taco seasoning mix and coat the chicken completely.
Cover the chicken and rest for at least 10 minutes.
Heat 2 tbsp olive oil in a large pan and add the chicken.
Cover and cook the chicken to medium-high heat for 8-10 minutes per side or until done.
Remove the chicken from heat, let it cool for at least 5 minutes and then shred.
Now heat 1 tbsp olive oil in a pan, add in the onion and saute for a minute.
Add tomato sauce, salt and cook for a minute. Then add kidney beans, mix well.
Add the shredded chicken, combine everything well.
Assemble tacos by placing about 1/4 cup of chicken, red onion, bell pepper into each shell.
Top with a tablespoon of sour cream and fresh coriander.
Taco Seasoning:
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano oregano
1 teaspoon black pepper
4 tbsp chilli powder
2 tbsp cumin powder
1 tbsp paprika powder
1 tbsp salt or salt to taste
Method:
In a jar, add all the spices, cover tightly and shake.
