Cashew Pakora Bakery Style Recipe | Kaju Pakora | Munthiri Pakora
Cashew pakoda is a famous bakery snack in India. It's very light and crispy; this snack tastes fantastic with coffee or tea at any time.
Servings - 4
Ingredients:
1/2 cup cashews
1 tbsp ghee
1 red onion, sliced thinly lengthwise
1 cup gram flour/besan
2 tbsp cornstarch
2 tbsp rice flour
1 tsp fennel seeds/saunf
1 tsp chilli powder
1 tsp salt or salt to taste
1/4 tsp baking soda
1/4 tsp asafoetida/hing
6 curry leaves, chopped
1 green chilli, chopped
1/3 cup water
Oil for deep frying
Method:
In a pan, add ghee and warm it up.
Add cashews, fry until golden and let them cool down.
Meanwhile, in a large mixing bowl, add onion and separate.
Next, add gram flour/besan, cornstarch, rice flour, fennel seeds/saunf, chilli powder, salt, baking soda, asafoetida/hing, curry leaves, and green chilli.
Squeeze and mix all ingredients well.
Now, add fried cashews and mix well.
Add water, mix well and make a stiff dough.
Heat oil in a deep frying pan, and reduce the heat to medium.
Drop a small portion of dough in hot oil and fry for 1 - 2 minutes.
Flip and fry the pakoras until golden and crispy.
Drain them and serve warm with tea or coffee.
Store the leftover pakoras for up to 3 days.
