Salmon with Cherry Tomatoes and Basil
Servings: 2
Ingredients:
400g salmon fillets
Salt & pepper to taste
3 tablespoons olive oil
1 tablespoon minced garlic
Green peppers to taste
Zest of 1 lemon
1 1/2 cups cherry tomatoes
1/4 cup chopped basil leaves
1/2-1 lemon, juiced
Method:
Marinate the salmon with salt & pepper for 10 minutes.
Heat 1 tablespoon olive oil, add garlic and green peppers.
Sauté for 2-3 minutes or until aromatic.
Next, add lemon zest and stir.
Add cherry tomatoes and season with salt and pepper to taste.
Cook on medium-low heat for 3-4 minutes.
Stir in the basil leaves and lemon juice.
In another pan, heat 2 tablespoons olive oil.
Place parchment paper and place the salmon. (Using the parchment paper is optional).
Cook the salmon for 4 minutes, and after 4 minutes, flip and cook for 2-3 minutes more.
Arrange the salmon on a serving plate and spread the tomato sauce.
