Curry Pasta | One Pot Coconut Curry Pasta | Indian Italian Cuisine

Ingredients:

  • 2 tbsp butter

  • 1/2 inch ginger 

  • 4 to 5 cloves garlic

  • 1/2 onion

  • 50 g green beans

  • 1 carrot

  • 50 g cauliflower 

  • 1 tbsp curry powder

  • Salt to taste

  • 2 cups pasta

  • 4 to 5 cups vegetable stock or water

  • 4 to 5 cherry tomatoes

  • 1 cups coconut cream

  • Coriander 


Method:

  1. Heat butter in a pot, add ginger & garlic, saute.

  2. Add onion and saute until its little bit brown. Then add beans, carrot, cauliflower.

  3. Add curry powder, salt, pasta vegetable stock, tomatoes and cook.

  4. When the pasta is 90% done then add coconut cream mix well and cook it for 2 more minutes, and serve hot.
