Lamb Vindaloo
Ingredients:
500g Lamb
2 tbsp Oil (+ 2 tbsp oil)
1 Bay leaf
2 tbsp Garlic and garlic paste
2 large Onion (Finely chopped)
½ cup Tomato puree
1 tbsp Chilli powder
1 tsp Cumin powder
½ tsp Turmeric powder
¼ tsp Cardamom powder
½ tsp Pepper powder
1 tsp Garam masala
2 tbsp White vinegar
Fresh coriander leaves chopped
Water (as required)
Salt to taste
1 large Potato (Optional)
1 tbsp Sugar (Optional)
Method:
Heat oil in a large pan/pot, add potatoes and fry for about 2 minutes.
Remove the potatoes keep that aside.
In the same pan heat 2 tbsp oil, add bay leaf & stir.Now add in the chopped onion and cook for a minute.
Add ginger and garlic paste, sauté for a minute.
Add cumin powder, turmeric powder, cardamom powder, pepper powder, garam masala, chilli powder and sugar, stir for few seconds.
Add the tomato puree, mix and cook for a minute.
Now add the lamb and mix, add in the salt, water, white vinegar, and fried potato. Mix well.
Cook on medium low heat for 25 to 35 minutes or cook until the lamb is tender.
Garnish with some fresh coriander.
