Hungarian Lamb Goulash Soup
Servings - 2
Ingredients:
200g lamb
2 tbsp oil
4 garlic cloves
1 large onion, chopped
1 tsp sweet paprika powder
1 tsp smoked paprika powder
1 1/2 litre broth
1/4 cup tomato purée
Pepper to taste
Salt to taste
1 large carrot, cubed
2 potatoes, cubed
2 celery ribs
1 red bell pepper
Hungarian pepper or hot pepper to taste
Method:
Cut lamb into small cubes. Heat the oil in a saucepan, add garlic and sauté.
Add onion and sauté the onion for 2 minutes.
Now, add lamb, stir, cover and cook for 2 minutes.
After 2 minutes, add in the sweet paprika powder and smoked paprika powder.
Stir and add the broth, mix and then add tomato puree.
Cover and cook on medium-low heat until the lamb is nearly tender.
Season with pepper and salt, then add carrots, potatoes, celery, and bell pepper.
Mix well and cover, simmer for 10 to 15 minutes or until vegetables and lamb are fork-tender.
Finally, add Hungarian or any hot pepper to taste and simmer for 1 more minute.
