Flavorful Twisted Peri Peri Chicken
Servings - 3 to 4
Ingredients:
800g boneless chicken (cut into bite-sized pieces)
2 tablespoons olive oil (for marinade)
Salt to taste
Pepper to taste
1 tablespoon chilli flakes
2 tablespoons peri peri masala
2 tablespoons garlic, finely chopped
2 tablespoons parsley, chopped (plus extra for garnish)
2 tablespoons lemon juice
1-2 teaspoons olive oil (for cooking)
20-30g butter
200g cherry tomatoes, whole
Method:
In a bowl, mix chicken with olive oil, salt, pepper, chilli flakes, peri peri masala, garlic, parsley, and lemon juice.
Let it marinate for 30 minutes.
Heat olive oil and butter in a pan.
Add the marinated chicken and cook until fully done, stirring occasionally.
Toss in the cherry tomatoes and cook for 2 minutes until slightly softened.
Sprinkle with fresh parsley and serve hot.
