Flavorful Twisted Peri Peri Chicken

Servings - 3 to 4



Ingredients: 



  • 800g boneless chicken (cut into bite-sized pieces)   

  • 2 tablespoons olive oil (for marinade)   

  • Salt to taste   

  • Pepper to taste   

  • 1 tablespoon chilli flakes   

  • 2 tablespoons peri peri masala   

  • 2 tablespoons garlic, finely chopped   

  • 2 tablespoons parsley, chopped (plus extra for garnish)   

  • 2 tablespoons lemon juice   

  • 1-2 teaspoons olive oil (for cooking)   

  • 20-30g butter   

  • 200g cherry tomatoes, whole  



Method:  



  1. In a bowl, mix chicken with olive oil, salt, pepper, chilli flakes, peri peri masala, garlic, parsley, and lemon juice. 

  2. Let it marinate for 30 minutes.   

  3. Heat olive oil and butter in a pan. 

  4. Add the marinated chicken and cook until fully done, stirring occasionally.   

  5. Toss in the cherry tomatoes and cook for 2 minutes until slightly softened. 

  6. Sprinkle with fresh parsley and serve hot.
