Cashew Chicken Curry
Servings - 5
Ingredients:
2-3 tbsp Oil
1 tbsp Ginger-Garlic Paste
3 Red Onions, finely chopped
1 kg Chicken, cut into pieces
1 tbsp Salt (or to taste)
3 Tomatoes, finely chopped
1 tsp Cumin Powder
½ tsp Turmeric Powder
1 tbsp Garam Masala
1 tbsp Red Chilli Powder
2 tbsp Coriander Powder
1 tbsp Kashmiri Chilli Powder
⅓ cup Cashew Paste
100 ml Fresh Cream
6 Green Chillies, slit
1 tbsp Kasoori Methi, crushed
2 tbsp Lemon Juice
1 tbsp Butter
Fresh Coriander, chopped (for garnish)
Method:
Heat oil in a pan. Add ginger-garlic paste and sauté for a minute until fragrant.
Add chopped onions and cook for 3-4 minutes until they turn soft and golden.
Add chicken pieces and sauté for 2-3 minutes.
Sprinkle salt, cover, and cook for 5 minutes.
Add chopped tomatoes and cook for another 2-3 minutes until they turn mushy.
Add cumin powder, turmeric, garam masala, red chilli powder, coriander powder, and Kashmiri chilli powder. Mix well.
Cover and cook for 5-6 minutes, stirring occasionally, until the chicken is tender.
Add cashew paste and fresh cream.
Mix well, cover, and cook for 2 minutes.
Add green chillies, crushed kasoori methi, lemon juice, and butter. Stir well.
Garnish with fresh coriander and serve hot with naan, roti, or rice.
