Mango Bread | Mango Cake Bread
Ingredients:
1 cup all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
1/4 cup butter, softened
1/4 cup vegetable oil
1 cup sugar
1/4 cup raisins
2 eggs
1/4 cup dry coconut
1 cup chopped mango
Method:
Preheat oven to 175 degrees C.
In a large bowl, sift together flour, baking soda, salt and cinnamon.
Beat together the butter, oil and sugar until light and fluffy.
Add eggs & beat well.
Blend this mixture into the flour mixture, just to combine.
Fold in the mango, raisins, and coconut mixing just enough to evenly combine.
Bake in preheated oven for 45 to 60 minutes or until a toothpick inserted into the centre of the loaf comes out clean.
