Chocolate Cupcakes with Nutella Frosting

Ingredients:


  • 1 1/2 cups all-purpose flour

  • 1/2 cup cocoa powder

  • 1 cup hot water

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 100 g butter

  • 1 cup sugar

  • 2 tsp vanilla extract

  • 1 large egg


Method:


  1. Preheat oven to 180 degrees C.

  2. In a large bowl, whisk together the butter, sugar, egg, and vanilla for 3 minutes and then add hot water.

  3. Add flour, baking soda, baking powder, and cocoa powder. Mix well.

  4. Fill each muffin cup about 3/4 full of batter and bake for about 18 - 20 minutes
    or until a toothpick inserted in the center of a cupcake comes out clean.

  5. Let them cool completely before decorating.

  6. Cut the peak of the cupcakes & use the crumbles as sprinkles.


Nutella Frosting:


  • 100g butter softened

  • 250g confectioner’s sugar

  • 1 tsp vanilla extract

  • 2 tbsp heavy cream


Method:


  1. In a bowl, beat the butter, Nutella and powdered sugar on low speed.

  2. Add vanilla and cream beat for 3 to 4 mins.

  3. Pipe frosting on cupcakes and sprinkle some crumbs.
