Leftover Rice Roti | Gluten-Free Roti With Cooked Rice | Akki Rotti

Ingredients: 



  • 2 cups rice (cooked / leftover) 

  • 1 cup water 

  • 1/2 cup rice flour 

  • Salt to taste 

  • Oil  



Method: 



  1. In a blender, add cooked rice and water. 

  2. Blend to smooth paste and transfer the rice paste to a mixing bowl. 

  3. Add salt, and add rice flour little by little; combine well. 

  4. Knead to a smooth and soft dough.  Roll the lemon-sized rice dough into a ball and flatten it. 

  5. Pat and flatten with the help of palm and finger on a greased wax paper. 

  6. Place the roti on a hot tawa and gently press.

  7. Cook the roti for a minute and spread oil over the roti. 

  8. Flip, spread oil and cook the roti on both sides until done. 

  9. Serve rice roti with chutney or palya.
